Even though sweet corn is a warm-season crop, it can be grown successfully in less warm climates as well. Do not plant into cold wet soil. These conditions favour the growth of fungi which can rapidly rot the seed. Ensure the seed is fungicide treated if planting into cool soil.Getting cobs to mature is the big battle when growing corn. The maturity of the ears is not controlled by the size of the plant, or by the length of day, but by the accumulated heat the plant has had while it grew. Corn plants generally grow very tall and will shade other vegetables. Some plants will benefit from shade, such as lettuce, but heat loving plants must be placed so that the corn does not shade them.Plant your corn in a square or block pattern rather than in long, narrow rows. Corn is wind-pollinated and square planting patterns results in greater pollination. A minimum 100 plants in a block is suggested for optimum pollination. Missing kernels in a cob of corn are an indication of poor pollination. As soon as the cobs are harvested the sugars in the kernels quickly convert to starch, producing a less sweet product. To ensure maximum sweetness, cobs should be immersed in ice cold water as soon as possible after picking, and left in the water until eaten.
